Chocolate Raspberry Bundt Cake


In my New Year's post a few weeks ago, I set the goal to bake at least one made-from-scratch dessert each month in 2016. Accomplishing that was pretty easy for January, since both my mom and my best friend Rachel have January birthdays. For my mom, I decided to make a Chocolate Raspberry Bundt Cake from a recipe I found at Food.com, and I made Rachel some Chocolate Covered Strawberry Cupcakes from The Cake Blog.

As you may have noticed, this blog's title only refers to the bundt cake. That's because, although the cupcakes baked and tasted just fine, I encountered issues with the icing. The recipe calls for a strawberry puree for the icing, I added too much puree, and the icing was really gloopy and a horrific base for the chocolate covered strawberries. They did not look good, but they were fairly tasty. This is how we learn!

Now, back to the bundt cake. The cake is supposed to have a raspberry cream cheese filling (yum), but I forgot to pick up the cream cheese. My mom lives in a pretty rural area, so heading out to buy cream cheese wasn't a great option. Suffice to say, my version of the cake did not have a cream cheese center, but I did toss some raspberries into the batter. A few ended up sinking to the bottom of the pan and creating craters in the finished product (see top right of the photo below for a good look at said crater). I added a raspberry glaze, topped it with some fresh raspberries, and all-in-all it turned out nicely.


Even though my first ever made-from-scratch cakes encountered some issues, they were a success for the most part. Regardless of how they looked, they both tasted delicious, and I had two birthday girls that were very happy with their cakes.
